What?Another Tofu Primer?

Well, not exactly. Suffice it to say that much has been written about wonderful delicious Tofu and a lot of that material is available right here on the Internet or in books available at your library. We will however, explain a little here for those too busy (or otherwise disinclined) to do their homework.

Tofu is oftentimes referred to as "Soy Bean Curd" which can more easily be explained in terms of the cheesemaking process. As cheese is the result of a process of "coagulating" milk, that is, separating milk into solid components (curds) and liquid components (whey), Tofu, as well, is the "Soy milk" separated into solid and liquid components by a comparable method.

In the case of Tofu, unlike with milk, we have some very important distinctions. First, regular milk comes from the cow (or a Buffalo, or Goat, etc.). That makes it an animal product. Milk is also quite fatty and contains Cholesterol. It is, however, ready to be separated into its usable components for cheesemaking. Soymilk, on the other hand, has to first be made from Soybeans, after which it too can be separated into its equivalent "curds" and "whey". Other basic differences worth mentioning are that Tofu contains less fat, no cholesterol, is 100% vegetarian and is a good source of Complete Protein. Soy is one of the very few plant sources containing all of the eight Essential Amino Acids. Tofu also provides Calcium, Potassium and other important bioactive nutrients such as Folic Acid and Isoflavones.

The original Tofu process dates back over three thousand years to ancient China and was considered an imperial treat in those days, even before the amazing nutritional aspect was understood. Its consumption eventually trickled down to the general population and Tofu became an important element in asian cuisine from India to Japan, Korea to Indonesia and beyond. One of the alluring features of nutritious Tofu is that in cooking, it acquires the general flavour of all of the foods that it is combined with. Instead of "shouting" its own flavour from within a given dish, Tofu gently incorporates the essence of the dish, thus enhancing the melding and mixing of spices and sauces like no other ingredient. So there you have it: Tofu, the uniquely nutritious, Tofu the adaptively delicious. It still seems amazing that more people in the west don't eat Tofu on a regular basis. That is changing, however, as more people discover this beneficial and exciting food.
